These Vegan Cheesy Potato Wedges are a perfect snack when you're craving something cheesy and comforting. The potatoes are air-fried so they're a much healthier choice than regular fried potatoes.

Cheese fries and mac & cheese have been my comfort foods as long as I can remember. Since going vegan, I've been able to create lots of cheesy recipes like my vegan mac and cheese but haven't got around to making my own cheese fries.

And let's be honest, no matter how tasty they might be, I don't really want to be eating deep fried potatoes much anymore either.

That's why I'm so glad I had the chance to review JL Field's new book, The Vegan Air Fryer, because it has a tasty recipe for Vegan Cheesy Potato Wedges that hits the spot without deep frying any potatoes.

The Vegan Air Fryer

The Vegan Air Fryer: The Healthier Way to Enjoy Deep-Fried Flavors shows readers how to air fry foods with little or no oil to make healthier versions traditionally fried recipes. JL shares air frying basics as well as more in-depth recipes.

Chapters included are: breakfasts and brunch, starters and snacks, side dishes, main dishes, one-basket meals, and desserts. Yes, you can even make desserts in the air fryer!

If you're new to air frying or an old pro at it, I think you'll love this book!

How to Make the Cheesy Potatoes

  • Slice the potatoes
  • Add oil
  • Add pepper
  • Add garlic powder
  • Airy fry or bake
  • Make the Cheesy Sauce
  • Top the cooked potatoes with cheesy sauce

Substitutions

These vegan Cheesy Potato Wedges were really easy to make. Matt and I enjoyed them so much, I made them again later in the week for a movie night snack.

Although JL used fingerling potatoes, I had to use small baby potatoes because I could not find fingerling potatoes anywhere (and I tried a few places!). I cut those in 4 to make them skinnier like the fingerling potatoes would have been.

If you have an air fryer, you're going to love making these potatoes. I like the potatoes even without the cheesy sauce which is saying a lot because I love anything (vegan) cheesy.

You can also try these potatoes with my Vegan Nacho Cheese Sauce if you like things a little spicy.

No AirFryer? No Problem - Bake Them in the Oven

If you don't have an air fryer, you can still enjoy these tasty potatoes!

Simply bake the potatoes at 375 degrees for about 20 minutes (or until done to your liking) then top with cheese! I've tried them this way too and they are just as delicious.

Vegan Cheesy Potato Wedges

INGREDIENTS

For the Potatoes
  • 1 lb fingerling potatoes*
  • 1 teaspoon extra virgin olive oil**
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon garlic powder
For the Cheese Sauce
  • ½ cup raw cashews
  • ½ teaspoon ground turmeric
  • ½ teaspoon paprika
  • 2 tablespoon nutritional yeast
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons cup water may need up to ¼ cup

INSTRUCTIONS

1. Preheat the air fryer to 400°F for 3 minutes. Wash the potatoes. Cut the potatoes in half lengthwise and transfer them to a large bowl. Add the oil, salt, pepper, and garlic powder to the potatoes. Toss to coat. Transfer the potatoes to the air fryer. Cook for 16 minutes, shaking halfway through the cooking time.

2. Combine the cashews, turmeric, paprika, nutritional yeast, and lemon juice in a high-speed blender. Blend on low, slowly increasing the speed and adding water as needed. Be careful to avoid using too much water, as you want a thick, cheesy consistency.

3. Transfer the cooked potatoes to an air fryer–safe pan or a piece of parchment paper. Drizzle the cheese sauce over the potato wedges. Place the pan in the air fryer and cook for 2 more minutes at 400°F.

NOTES

* I could not find fingerling potatoes so I used baby potatoes cut into quarters.

**Omit the olive oil for a no-oil option

About the first-gen futures scholarship

Scholarship award available for both college and high school students
Being the first in your family to attend college is an inspiring feat, often with its own unique challenges. First-generation students may not have the same guidance in navigating parts of the higher education system as other students, such as the application process, obtaining financial aid, and even what to expect in college itself.

Financial constraints can also be a significant roadblock for such students, which may limit their choices, force them to balance jobs, family responsibilities, and school work all at once, and make the college experience much more stressful.

Despite these struggles, first-generation college students have proven time and again to be extremely resilient, determined, and hard-working. They embody a spirit of ambition and perseverance as they work toward creating the future they want for themselves and their families.

The First-Gen Futures Scholarship aims to recognize and support exceptional students who are overcoming the barriers of being the first in their families to attend college. By providing financial assistance to deserving individuals, we seek to alleviate some financial stress so that these students can focus more on their studies.

About the Annual Hero's Legacy Scholarship

Scholarship award available for both college and high school students
Military families embody resilience, strength, and unwavering support for their loved ones in uniform. There are many overlooked sacrifices they make that should be recognized and rewarded. Military families endure extended deployments, adjust to new environments, and face uncertainty on a frequent basis.

The children of military families often adapt to new schools and environments, embodying the values of adaptability and perseverance, and experience the emotional toll of their loved one being deployed in dangerous situations.

The Heroes' Legacy Scholarship is a tribute to the extraordinary dedication and sacrifice of military families who stand alongside their loved ones in service to our country. Unfortunately, there are many struggles that military families endure while a parent or guardian serves in the armed forces.

In recognition of the burden higher education can place on military families, this scholarship seeks to give back to these dedicated families to honor their sacrifices.

Any high school senior, undergraduate, or graduate student who is a U.S. citizen or permanent legal resident and the child of at least one parent who has served in the U.S. military may apply for this scholarship.
